One of my go-to meals that I absolutely love to make is this Chicken Bowl. It’s not only super easy to throw together, but it’s also incredibly versatile, making it perfect for busy weeks. I can change up the components depending on what I’m in the mood for, whether I want to add more veggies, switch up the grains, or try a different sauce. It’s my perfect meal prep solution when I need something quick, delicious, and customizable!
Greek Bowl with Garlic Butter Chicken
Ingredients:
- 10 chicken tenders
- 1/2 tbsp garlic powder
- 1 tbsp haitian epis
- 1/2 tbsp paprika
- 1/4 cup plain greek yogurt
- 1 tbsp olive oil
- Salt & pepper to taste
- 2 tbsp butter
- 1 clove garlic, minced
- 2 tbsp parsley, chopped
- 1 cup wheat couscous
- 1/2 cube of chicken cube
- 1 can sweet corn
- 1/4 cup cilantro, chopped
- 1 cup tomatoes and onion, diced
- 1/4 cucumber, diced
Instructions:
1. Cook the Chicken Tenders:
- Preheat your air fryer to 400°F (200°C).
- Season the chicken tenders with olive oil, garlic powder, haitian epis, paprika, add plain greek yogurt, salt, and pepper.
- Place the chicken tenders in the air fryer basket and cook for 18 minutes, flipping halfway through, until crispy and golden.
2. Prepare the Garlic Butter Sauce:
- While the chicken is cooking, melt the butter, add the minced garlic and parsley.
- Once the chicken is done, brush the garlic butter sauce over the tenders for a rich, savory finish.
3. Cook the Couscous:
- Follow instructions on the box
4. Prepare the Bowl:
- In a bowl, layer the couscous, add salad on the other side, add your vegetables salad and top with greek yogurt. Drizzle with any leftover garlic butter sauce
5. Serve & Enjoy!
